Treating your queen to lunch at a fancy restaurant is always an option, but your chances of finding a seat at your mom’s favourite restaurant are slim.
What better way to show mom your love and appreciation than by surprising her with a home-cooked meal.
This Sunday, let your mom put up her feet and stay out of the kitchen while you create a five-star dish that she will never forget. Whether it’s her favourite casserole, a delicious seafood dish or a sweet treat, our moms appreciate nothing more than our efforts to make them smile.
Siba Mtongana shared her Mother’s Day recipe that is guaranteed to make her day.
A little effort goes a long way, so leave the bacon and eggs for another day and wow her with your newfound culinary skills.
Double Delicious Chocolate Bark
Siba Mtongana
Ingredients
- 400g 65% dark chocolate
- 400g milk chocolate
- 3 tbs butter
- 100g macadamia nuts roughly chopped
- 100g pistachio nuts roughly chopped
- 100g dried mango roughly chopped
- 100g dried apricots roughly chopped
- 100g dried pineapple roughly chopped
- Garnish
- 50g dried cranberries
- 80g fresh toasted coconut, store bought, roughly crushed
Method
- Place the two kinds of chocolate in a double boiler and melt.
- Stir in the butter. Add half of all the nut and fruits (except for the cranberries and fresh toasted coconut) and stir. Tip into a greased and lined 28cm loose bottom circular fluted baking tart tin. Take a handful of the fresh toasted coconut and sprinkle round the edge, crushing it with your fingers as you go.
- Mix the rest of the dried fruit and nuts with the cranberries and scatter in
the centre - pressing them down slightly.
- Allow to set, but it must not be rock hard, and serve.
