Most people associate soup with winter but you would be surprised by how one can actually enjoy a cold soup on a hot summer’s day.

Summertime calls for light and refreshing meals, and cold soups are the perfect answer.

Not only are they delicious, but they're also a fantastic way to cool down on a hot day.

Here are a few popular cold soups to get you started.

Gazpacho

This classic Spanish soup is a vibrant blend of tomatoes, cucumbers, bell peppers, onion, and garlic.

It's often seasoned with olive oil, vinegar, and herbs like basil and oregano.

Some people like it thicker therefore they add some bread or croutons.

When making this soup always use ripe, flavourful tomatoes for the best taste.

Cucumber soup

This refreshing soup is incredibly simple to make.

Blend cucumbers with yoghurt, dill, and a touch of lemon juice.

Season with salt and pepper to taste.

Garnish with fresh dill sprigs and a dollop of plain yoghurt.

Borscht

While traditionally served warm, borscht can also be enjoyed chilled.

This beetroot-based soup is packed with nutrients and has a tangy flavour.

It’s often made with beetroot, cabbage, carrots, and onions.

Serve chilled with a dollop of sour cream and fresh dill.

Vichyssoise

This elegant French soup is made with leeks, potatoes, and cream.

It's often flavoured with chives and tarragon.

Chill thoroughly before serving.

Garnish with chives and a sprinkle of smoked paprika.
